Sumptuous Sundays: Healthy Dinner under 30 minutes (Salmon in White Wine Sauce and Balsamic- Glazed Portobello Mushroom)


Do you want to make your own healthy and sumptuous dinner, but work has just sucked the life force out of you? Eating healthy takes effort, but with this dish, you don’t have to exert a lot. (As long as the ingredients are right in your home. make sure to stack on them in your weekend trip to the grocery) I like preparing this super quick dish on busy or lazy days. It’s called Salmon in White Wine Sauce and Balsamic- Glazed Portobello Mushroom.

Ingredients

Salmon meat
Two tbsps. White Wine (Any white wine will do)
Salt
Ground Black Pepper
Tarragon
Basil Leaves
Lemon juice extracted from ½ fresh lemon
½ tsp. Olive Oil (Go healthier: Extra Virgin Olive Oil)
1 tsp. Butter (Go healthier: Reduced fat butter)

STEP 1: Season the Salmon meat with salt and pepper. Set aside.

STEP 2: In a hot non-stick skillet, put ½ tsp. butter and olive oil. You just have to line the skillet with the oil and butter. Allow them to heat up for about 3 minutes.

STEP 3: Next, put the seasoned Salmon meat. Fry each side for 3 minutes only. Keep an eye on the Salmon so it won’t get overcooked. Otherwise, it’ll become too flaky and dry. Salmon doesn’t have to be well done. After cooking the Salmon, transfer to a plate.

WHITE WINE SAUCE

STEP 1: Add the remaining serving of butter to the pan. Allow to melt.

STEP 2: Pour the lemon juice, tarragon, and Basil Leaves into the pan. Stir fry for around 3 minutes. Finally, pour the wine and allow to simmer for 3 more minutes.

STEP 3: Using a ladle, scoop the sauce from the pan and drizzle onto the salmon.

PORTOBELLO MUSHROOM

Portobello mushroom is treasured for its meaty taste, hence it’s dubbed as the ‘steak’ of vegetarians. It’s best grilled, but this method of cooking requires a lot of preparation. Portobello is also a bland kind of fungi and needs to be seasoned to bring out its meaty taste. Here’s a basic way to cook this thing.

Ingredients

1 whole Portobello Mushroom
1 tsp. Red Wine (Any red wine will do)
½ tsp. Olive Oil (Go healthier: Extra Virgin Olive Oil)
3 tbsps. Balsamic Vinegar
Chopped White Onion and Garlic

STEP 1: Cut the stem of the Portobello Mushroom. Throw away.


STEP 2: Heat a non- stick skillet and add Olive Oil. Like the instructions on the White Wine Salmon recipe, you only need to line the skillet. Don’t increase the serving of oil or else, your Portobello mushroom will turn soggy.


STEP 3: Sauté the chopped white onion and garlic pieces.

STEP 4: Place the Portobello Mushroom in the pan. Cook each side for 5 minutes. Move all the garlic and onion chunks to the bottom of the mushroom to infuse it with flavor.

STEP 5: After cooking both sides, pour balsamic vinegar and red wine. Let it simmer for 4 more minutes while turning the mushroom after every two minutes.

Voila! You now have a clean, healthy, yummy dinner! Enjoy! :)
